well you can host servers without an emulator too you know
I used to host a Ragnarok server but the server stopped working so i deleted it still have the method to host it again though ( if you are interested)
I also used to run WoW servers, Lineage servers and etc ^^
But all of these are nonsense you just download a program and start a server. boring...
The real thing is to code your own emulator for any MMO game so hosting a server with an emulator won't increase your knowledge at all you will get knowledge if you decompile one of the emulators and create your own with C++
Anyway you want an emulator for a random game right?
You could always search in google but i will give you some...
You could make an Anarchy Online server but on Ubuntu & Linux
or Ragnarok
